Ingredients
For the Lamb Chops
- 8 pasture-raised lamb chops (about 1-inch thick)

- 3 cloves garlic, finely minced
- 2 tbsp fresh rosemary, finely chopped
- 2 tbsp fresh thyme, finely chopped

- 1/2 cup almond meal (or whole-grain breadcrumbs for crunch)

Instructions
1. Prepare the Lamb Chops
- Take the lamb chops out of the refrigerator 30 minutes before cooking to bring them to room temperature. This ensures even cooking.
- Pat them dry with a paper towel, then season generously with salt and pepper on both sides.
2. Make the Herb Crust
- In a small bowl, combine the garlic, rosemary, thyme, parsley, and almond meal.
- Mix in olive oil or tallow until the mixture forms a crumbly paste. Add Dijon mustard if desired.
3. Sear the Lamb Chops
- Heat a large cast-iron skillet over medium-high heat. Add a splash of olive oil or tallow.
- Sear the lamb chops for 2-3 minutes per side, until golden brown. Remove from the skillet and set aside.
4. Apply the Herb Crust
- Preheat your oven to 400°F (200°C).
- Place the seared lamb chops on a baking sheet lined with parchment paper.
- Spoon the herb mixture on top of each chop, pressing gently to adhere.
5. Roast to Perfection
- Roast the lamb chops in the preheated oven for 5-7 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C). Adjust cooking time for your preferred doneness.
- Let the lamb chops rest for 5 minutes before serving.
