Ingredients

For the Lamb Chops

  • 8 pasture-raised lamb chops (about 1-inch thick)
  • 2 tbsp extra virgin olive oil (or grass-fed tallow for added nutrients)
  • Sea salt and freshly ground black pepper (to taste)

For the Herb Crust

  • 3 cloves garlic, finely minced
  • 2 tbsp fresh rosemary, finely chopped
  • 2 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp Dijon mustard (optional, for depth)
  • 1/2 cup almond meal (or whole-grain breadcrumbs for crunch)

Instructions

1. Prepare the Lamb Chops

  1. Take the lamb chops out of the refrigerator 30 minutes before cooking to bring them to room temperature. This ensures even cooking.
  2. Pat them dry with a paper towel, then season generously with salt and pepper on both sides.

2. Make the Herb Crust

  1. In a small bowl, combine the garlic, rosemary, thyme, parsley, and almond meal.
  2. Mix in olive oil or tallow until the mixture forms a crumbly paste. Add Dijon mustard if desired.

3. Sear the Lamb Chops

  1. Heat a large cast-iron skillet over medium-high heat. Add a splash of olive oil or tallow.
  2. Sear the lamb chops for 2-3 minutes per side, until golden brown. Remove from the skillet and set aside.

4. Apply the Herb Crust

  1. Preheat your oven to 400°F (200°C).
  2. Place the seared lamb chops on a baking sheet lined with parchment paper.
  3. Spoon the herb mixture on top of each chop, pressing gently to adhere.

5. Roast to Perfection

  1. Roast the lamb chops in the preheated oven for 5-7 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C). Adjust cooking time for your preferred doneness.
  2. Let the lamb chops rest for 5 minutes before serving.
