- 1/4 tsp cayenne pepper (optional, for a touch of heat)
Optional Side Suggestions
- A fresh Greek salad with seasonal vegetables from Credence Farms
- Warm, whole-grain flatbread or roasted sweet potatoes
Instructions
1. Prepare the Marinade
- In a medium bowl, whisk together olive oil, lemon juice, garlic, rosemary, oregano, smoked paprika, cumin, and cayenne pepper.
- Taste and adjust seasoning with salt and pepper.
2. Marinate the Lamb Chops
- Pat the lamb chops dry and season lightly with salt and pepper.
- Place them in a shallow dish or resealable bag, and pour the marinade over them, ensuring all pieces are evenly coated.
- Cover and refrigerate for at least 1 hour, or up to overnight for deeper flavor and added tenderness.
3. Cook the Lamb Chops
- Remove the lamb chops from the refrigerator 30 minutes before cooking to bring them to room temperature.
- Heat a grill, grill pan, or cast-iron skillet over medium-high heat.
- Sear the lamb chops for 3-4 minutes per side for medium-rare, or longer for your preferred doneness.
- Use a meat thermometer to check the internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
4. Rest and Serve
- Transfer the lamb chops to a plate and let them rest for 5 minutes to retain their juices.
- Garnish with a sprinkle of fresh herbs and a squeeze of lemon juice for brightness.
