  • Sea salt and freshly ground black pepper (to taste)

For the Marinade

  • 1/3 cup extra virgin olive oil (rich in healthy monounsaturated fats)
  • Juice of 1 lemon (high in vitamin C for immune support)
  • 4 cloves garlic, minced (packed with antioxidants and anti-inflammatory properties)
  • 2 tbsp fresh rosemary, finely chopped
  • 2 tbsp fresh oregano, finely chopped
  • 1 tsp smoked paprika (adds depth and supports healthy circulation)
  • 1/2 tsp ground cumin (rich in antioxidants and digestive benefits)
  • 1/4 tsp cayenne pepper (optional, for a touch of heat)

Optional Side Suggestions

  • A fresh Greek salad with seasonal vegetables from Credence Farms
  • Warm, whole-grain flatbread or roasted sweet potatoes

Instructions

1. Prepare the Marinade

  1. In a medium bowl, whisk together olive oil, lemon juice, garlic, rosemary, oregano, smoked paprika, cumin, and cayenne pepper.
  2. Taste and adjust seasoning with salt and pepper.

2. Marinate the Lamb Chops

  1. Pat the lamb chops dry and season lightly with salt and pepper.
  2. Place them in a shallow dish or resealable bag, and pour the marinade over them, ensuring all pieces are evenly coated.
  3. Cover and refrigerate for at least 1 hour, or up to overnight for deeper flavor and added tenderness.

3. Cook the Lamb Chops

  1. Remove the lamb chops from the refrigerator 30 minutes before cooking to bring them to room temperature.
  2. Heat a grill, grill pan, or cast-iron skillet over medium-high heat.
  3. Sear the lamb chops for 3-4 minutes per side for medium-rare, or longer for your preferred doneness.
  4. Use a meat thermometer to check the internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.

4. Rest and Serve

  1. Transfer the lamb chops to a plate and let them rest for 5 minutes to retain their juices.
  2. Garnish with a sprinkle of fresh herbs and a squeeze of lemon juice for brightness.
