- 1 Cowboy Ribeye Steak (2-2.5 lbs)
- Sea salt and freshly cracked black pepper
- 2 tablespoons olive oil
- 3 sprigs fresh thyme
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1 lemon, halved (optional for serving)
Instructions:
1. Prep the Steak: Take the Cowboy Ribeye out of the fridge and let it sit at room temperature for about 45 minutes to an hour. Pat it dry with a paper towel, then generously season with sea salt and black pepper on both sides.
2. Preheat the Grill: set your grill up for two-zone cooking: one side for direct high heat (around 450°F) and the other side for indirect medium heat.
3. Searing the Ribeye: Rub olive oil over the steak, then place it directly over the high heat zone. Sear for about 4-5 minutes on each side until a golden-brown crust forms.
4. Indirect Cooking: Move the steak to the cooler side of the grill, add the thyme and garlic on top of the steak, and cook with the lid closed for about 10-15 minutes, or until the internal temperature reaches your desired doneness (125°F for medium-rare, 135°F for medium). Flip the steak halfway through the cooking time.
5. Butter Finish: In the final few minutes, add a tablespoon of butter on top of the steak and let it melt, basting the steak in rich flavor.
