Recipe: Hearty Grass-Fed Beef Stew
Ingredients:
- 2 lbs grass-fed stew meat
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, chopped
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Fresh parsley for garnish
Instructions:
1. Season the Meat: Pat the stew meat dry with paper towels and season generously with salt and pepper.
2. Brown the Meat: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the stew meat in batches, browning on all sides. Remove and set aside.
3. Sauté Aromatics: In the same pot, add the chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
4. Build the Stew Base: Add the tomato paste, stirring to combine. Then pour in the beef broth, scraping any browned bits from the bottom of the pot.
